Step-by-step Guide:

1 – Heat a Dutch oven over medium-high heat. Add 3 tablespoons butter and heat until melted. Add onion and celery and cook until onion is translucent, about 4 minutes.

2 – Sprinkle with 1/4 cup of flour. Cook stirring constantly to cook out the raw flour taste, approximately one minute. Gradually add broth, stirring constantly, and bring to a boil. Reduce heat and simmer for 5 minutes.

3 – Stir in the chicken and green beans and season to taste with salt and pepper.  Add frozen peas and carrots and simmer for 5 minutes.

4 – While the soup is simmering, whisk remaining flour, baking powder, salt to taste and fresh parsley in a medium bowl.

5 – Add the remaining 2 tablespoons butter, using a fork to cut it into the flour mixture. Stir in milk.

6 – Using a small cookie scoop or two spoons, drop batter over simmering chicken mixture.

7 – Cover and simmer until dumplings are cooked through, approximately 12-15 minutes depending on size.

8 – Ladle soup into bowls and garnish with additional chopped parsley.

9 – Enjoy!

Pro Tips for Success:

  • Keep the dumplings light: Be sure to cover the soup while simmering so that the dumplings steam. This keeps them light and fluffy
  • Make it quicker with pre-cooked chicken: Save time by using rotisserie chicken or leftover cooked chicken. This way, you can skip the cooking part and jump straight into the fun of making this cozy dish.
  • Customize your veggies: Don’t love green beans or peas & carrots? Feel free to swap in your favorite veggies, like corn or spinach, to make the recipe fit your taste or dietary needs.
  • Perfect dumplings every time: Be careful not to overwork the dumpling batter! The key to fluffy dumplings is to mix just until combined, then drop them gently onto the simmering soup. Overmixing can make them tough.
