  • 4 slices white or sourdough bread
  • 4 t. Dijon mustard
  • 1 4 oz. chicken breast, grilled and thinly sliced
  • 1 medium avocado, peeled and thinly sliced
  • 1 tomato, thinly sliced
  • 1 c. fresh baby spinach
  • 1 c. mozzarella, shredded
  • 2 t. olive oil

Step-by-step Guide:

1 – Heat panini press according to manufacturer instructions.

2 – Spread one teaspoon of Dijon mustard onto each bread slice.

3 – Top 2 slices of bread with one-half each of the chicken, avocado, tomato, baby spinach, and shredded mozzarella.

4 – Add remaining bread to top to form a sandwich.
