Ingredients

  • 7 cloves garlic, unpeeled
  • 1 tbsp. olive oil, plus extra for drizzling
  • 1½ cups (250g) cooked chickpeas
  • 2 tbsp. tahini
  • 2 tbsp. lemon juice
  • ½ tsp. salt
  • 1 cup (15g) chopped kale, tightly packed
  • ¼ tsp. ground cumin
  • 2–4 tbsp. cold water

 

Instructions

  • Preheat the oven to 400°F (200°C).
  • Wrap the cloves of garlic in foil and roast in the oven for 20 minutes until soft. Remove from oven and allow to cool.
  • Once cool, peel each garlic clove and add to the blender, along with the chickpeas, olive oil, tahini, lemon juice, salt, kale, and cumin.
  • Blend until smooth, adding cold water 1 tablespoon at a time until you reach your desired consistency.
  • Transfer to a bowl and drizzle with olive oil. Serve as a dip.
